Vanilla Marie Biscuit Pudding

November 16, 2020

This is a vanilla version of my no bake chocolate biscuit pudding.  A biscuit pudding basically means one that will have layers of biscuits and pudding. I have used vanilla pudding and marie biscuits to make this dessert. This dessert is no-bake and is eggless.

If you like you can add white chocolate in this recipe though it's optional. This dessert is delicious even without white chocolate.

Serves 8

Suitable Dish size 27cm x 18 cm

24 marie biscuits

1 cup warm milk for Dipping the biscuits

1 small can of condensed milk (390g)

3 cup of cold water (use the same condensed milk can to measure)

1 teaspoon of vanilla essence

3 tablespoons of cornflour/ cornstarch

1/4 cup of white chocolate chips/finely chopped white chocolate chunks (optional)

100g of finely chopped, roasted cashews for garnishing (optional)

  1. In a small bowl, mix cornflour with 1/4 cup of water and set aside.
  2. In a saucepan, mix condensed milk, water and vanilla and bring it to a boil over medium heat.
  3. When it starts boiling add the cornflour paste and keep stirring until it reaches thick consistency. Add white chocolate chips at the this stage and keep stirring.
  4. When the mixture starts to thicken like cake batter, turn off heat.
  5. Soak marie biscuits in warm milk and place them in a layer on the bottom of the dish.
  6. Then spread a layer of the milk pudding prepared. Spread another layer of marie biscuits soaked in warm milk over the milk pudding. Repeat until the final layer ends with pudding.
  7. Cover the pudding with plastic wrap and chill for atleast 4 hours or overnight.
  8. Once the pudding has set, garnish with chopped cashews. Enjoy!
