Banana Bread

Got overripe bananas? No problem bake this Banana Bread. This is a super easy and super soft and moist Banana Bread. This is the best way to use overripe bananas and is great for breakfast or brunch. This is my all time favourite Banana Bread recipe. 





Ingredients

3 large overipe banana
1/3 cup melted butter (75g)
3/4 cup granulated white sugar (150g)
1 egg
1 tsp vanilla
1 tsp baking powder 
1/2 tsp baking soda
A pinch of salt
1 1/2 cup all purpose flour (200g)
1/4 cup buttermilk (fresh milk works too)
Some walnuts to garnish 



Directions

  1. Preheat the oven to 170 degrees Celsius.
  2. Line a loaf pan with baking paper. 
  3. Mash the banana with a fork and add the melted butter, sugar and mix well with a fork. 
  4. Whisk the egg slightly and add it to the banana mixture. 
  5. Sift in flour, baking powder, vanilla and baking soda. Fold with a spatula to mix everything. 
  6. Now pour the batter to the loaf pan and garnish with walnuts.
  7. Bake the banana bread for 1 hour or until the bread becomes brown in colour on top. 
  8. Insert a clean toothpick to see if the banana bread is ready. If it comes out clean it's done. 
Notes: Store in room temperature in an airtight container up to 2 days. This can be refrigerated up to 5 days.
