Coconut and Jam Sponge cake

This is probably one of my favorites of cakes. Coconut and Jam combination is a lovely combination. This cake can be made with minimum ingredients and is very easy to make. If you like to have a piece of cake without any frosting then you would love this cake. 


250g all purpose flour
225g salted butter 
225g white sugar
2 tsp baking powder
4 medium sized eggs
1 tsp vanilla essence
200g strawberry Jam
25g desiccated coconut


  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a 11 x 7 inches pan and line with baking paper.
  3. Beat butter and sugar together and add one egg at a time and beat well. 
  4. Then add the vanilla along with the flour, vanilla and baking powder. Beat in low speed until everything incorporated. (this should take 2 minutes)
  5. Pour the batter to the lined baking tray and bake for 25-30 minutes or until the cake is done. Let it cool slightly. 
  6. Meanwhile melt the strawberry jam using a microwave or stove. Pour it on top of the cake when the cake is hot. 
  7. Sprinkle desiccated coconut on top of the Jam. Let the cake cool completely before slicing. 
  8. Slice and serve! Enjoy! Store in the refrigerator.
