Chocolate Mousse is the perfect pick-me-up, especially if you're into chocolate. Looking for a rich, delicious and perfect chocolate mousse recipe?  Try out this tasty treat.

(Serves 6)

185g Cooking chocolate (grated)
5 eggs
3/4 cup heavy whipping cream + 1tsp sugar
15g butter
50g white sugar
2 tbsp chocolate ice cream (slightly melted in room temperature) (optional)
1/2 tsp vanilla

1. Combine grated cooking chocolate and butter in a heatproof bowl. Double boil or microwave it stirring occasionally until the chocolate has melt. Let it cool completely. ( This should be runny not too thick. )
2. Meanwhile in a bowl, whip the whipping cream with 1 tsp white sugar, using an electric beater in a medium to high speed until it reaches stiff peaks.
3. Separate egg yolks from whites in two separate bowls.
4. Whisk the egg yolks with vanilla until it becomes pale yellow colour and creamy.
5. Now using a rubber spatula, fold this mixture carefully with the whipping cream until it combines. Then pour the cooled chocolate also to this mixture and fold until incorporated. Keep this chocolate mixture aside.
6. In a separate bowl, beat egg whites with sugar using an electric mixer in a high speed, until it forms firm peaks. (Not very stiff peaks.)
7. Add 1/4 of beaten egg whites into chocolate mixture. Fold using a rubber spatula until white lumps disappear.
8. Now add this chocolate mixture to the remaining egg whites and fold carefully until incorporated and no more white lumps remain.
9. Finally, fold in the melted chocolate ice cream to this mixture. (This is optional, you can omit this if you don't have chocolate ice cream)
10. Divide this mousse mixture into 6 small glasses and refrigerate at least 6 hours or overnight is best.
11. When serving garnish with whipped cream and chocolate shavings or strawberries and mint leaves. Enjoy!
