Viana Rolls (Kimbula Buns)

Kimbula Banis is the name of this bun in Sri Lanka. Its a long and slim bun with some sugar on it. Its a very popular bun among the kids and even the adults.


(makes 4)

250g all purpose flour
2 tsp instant dry yeast
50g sugar
10g butter
150ml warm water
sugar (to sprinkle on top)
2 tbsp milk powder
Water for sprinkling
2tsp salt


  1. In bowl, mix all the dry ingredients first except water.Gradually add the water little by little until the dough is soft , but not sticky (if dough is sticky add more flour a tablespoon at a time.)
  2. Knead until smooth and elastic, for 8-10 minutes. Continue to knead until a soft ball of dough forms and clears the sides of the bowl. Place the dough in a lightly greased bowl and turn it over so it is completely coated.
  3. Cover with plastic wrap and leave in a warm place to rise until doubled in size, about 45 minutes to 1 hour.
  4. Turn the dough out onto a clean, lightly floured surface. Gently press it all over to remove any air pockets.
  5. Divide the dough in 100g Pieces. Working with one piece at a time.
  6. Take 100g size balls and make rounds and let them rest for 15 minutes.
  7. After 15 minutes roll one ball into a thin triangle shape with a rolling pin .
  8. Then roll the dough tightly from the wider side to the other end like croissants.
  9. Put them on well buttered trays again keep until double in size (about 15-20 min)
  10. Before putting them into the oven brush the tops with water & sprinkle sugar.
  11. Preheat the oven at 200c. Place the baking tray in the middle section and bake for 30-40 min until golden brown. To brown it further on top , broil in the oven for another 4-5 minutes at 150c
  12. Take them out of the oven & rest them for about 10 minutes before serve.
